Lately, I've been cooking lots and lots of bowls for dinner, meaning a grain or base of some sort, steamed veggies, a protein and a sauce. They are a perfect dinner, usually provide leftovers for lunch and are a great way to use up what you have in the fridge. I've been trying to cook gluten-free (more on that in another post) as well, so these bowls are good for that purpose too. If you pile on the veggies, it looks and feels like a ton of food for not a ton of calories.
